Natural ryazhenka is melted milk fermented with thermophilic lactic acid streptococci and acidophilus bacillus. To make homemade ryazhenka, use any clean container, such as a jug. Pour 1-3 liters of any melted milk at room temperature into it. Open the bag of sourdough “Skvaska” and pour all the contents into the container with milk. Mix thoroughly and leave the resulting mixture to ferment for 6-10 hours in a warm place at a temperature of +38… +42°C. For cooking in a yogurt maker or slow cooker, use the recommended temperature and cooking time according to the device’s functions. After the product gets a thick consistency, it is necessary to move the container to the refrigerator for 2-3 hours. The finished product should be consumed within 3 days. Do not forget, the longer the product is fermented, the thicker it will be with an expressive sour-milk sourness.
