They belong to the group of mesophilic bacteria, i. e., they are viable at temperatures from 22 to 40 degrees. For the preparation of sourdough, a freeze-dried method is used, as well as proprietary technologies that ensure the maximum concentration of colony-forming units and their viability.
For Kaprin Kefi sourdough, this value is 1011 CFU / g, which is 2-3 orders of magnitude higher than in a number of other dry sourdoughs. A properly prepared product contains a bacterial concentration of about 108-109 CFU/g, which exceeds the indicator of ready-made store-bought kefirs and sourdoughs by 1-2 orders of magnitude.
Kefir prepared with Kaprin sourdough is characterized by a delicate thick consistency and pleasant taste. By extending the exposure time or increasing the temperature at which it was prepared, you can make it thicker and more aromatic, focusing on your taste.
